Alright, so, I was messing around in the kitchen today, and I thought, why not try to make something I haven’t made before? I had a craving for something, I don’t know, cheesy and warm, maybe a little bit fancy. So, I was thinking about that Stewart Applebee thing.
I pulled out a bunch of stuff from the fridge and pantry. First, I grabbed some frozen spinach. I tossed that into a pot with some water and let it simmer until it was all thawed and soft. While that was going, I chopped up a few cloves of garlic, real fine, you know, so you don’t get big chunks of garlic in your mouth.
Then, I got a big mixing bowl and threw in a block of softened cream cheese. I love that stuff! Next, I added in a good amount of shredded mozzarella cheese. I mean, is there ever such a thing as too much cheese? I don’t think so! I also put in some grated Parmesan cheese, just because, why not? It adds that, like, salty, nutty flavor.
Once the spinach was ready, I drained it really well. You gotta squeeze all the water out, or else your dip will be all watery, and nobody wants that. After that, I mixed the spinach into the bowl with all the cheeses. Then came the garlic, and I also added a spoonful of mayonnaise – don’t judge, it makes it creamier! A pinch of salt, some black pepper, and I was good to go.
Mixing It All Up
I stirred everything together until it was all combined and looked like a cheesy, spinach-y mess. It was beautiful! I transferred the mixture into an oven-safe dish, like one of those small casserole dishes. I smoothed out the top and then sprinkled a little bit more mozzarella on top because, again, cheese.
Baking Time
I popped the dish into the oven, which I had preheated to 350 degrees Fahrenheit. Then it was just a waiting game. I kept checking on it, and after about 20 minutes, it was all bubbly and golden brown on top. It smelled amazing, like, seriously, my mouth was watering.
I took it out of the oven and let it cool for a few minutes, cause I didn’t want to burn my tongue. While it was cooling, I sliced up a baguette into nice, thick pieces. When I couldn’t wait any longer, I grabbed a piece of bread and dipped it into that cheesy goodness. Oh man, it was so good! Warm, cheesy, with a hint of garlic, and that spinach made me feel like I was eating something healthy, even though it was probably not.
Here’s a quick rundown of what I did:

- Chopped some garlic.
- Mixed cream cheese, mozzarella, and Parmesan.
- Combined spinach, garlic, mayo, salt, and pepper with the cheeses.
- Baked it in the oven until bubbly and brown.
- Dipped bread into it and enjoyed!
So, yeah, that’s how I made my version of a Stewart Applebee dip. It wasn’t too hard, and it was definitely worth it.
